EGG WASH

Ingredients:

  • 4 large eggs

  • 1 cup of yellow mustard

  • 2 cups of milk (or heavy cream)

  • 1 tablespoon of Cajun seasoning

Directions:

  1. In a small bowl, whisk together the eggs, mustard, milk (or cream), and Cajun seasoning until fully combined.

  2. Fully submerge item to be battered in the Creole egg wash solution, then roll item in Lester’s Seafood Fry Mix. 

  3. Left over Creole egg wash may be stored, in an airtight container, in the refrigerator for up to three days.
